If you love oxidized wines, then this Sylvaner is for you.
Just to break down the winemaking process. The tank was not filled all the way to the top with wine, which then caused a natural exposure to oxygen. It took 2 years for the wine to ferment and in the end, the layer of yeast (flor) protected the wine from oxidation. After five years of aging, it was then ready to be bottled.
Expect lots of nutty, honey, exotic fruits, and clean, flowing acidity on the palate with of course a powerful oxidative aroma and a rich golden colour in the glass.
This wine should be decanted before serving and lasts at least 4 days open.
Perfect with a hard cheese like Comtè or pairing it with a sweet dessert at your Christmas or Easter dinner.
