Bossanova crafts modern expressions of indigenous Abruzzo grapes. Their biodynamic farming, minimal intervention approach yields wines bursting with unique character and personality.
UnRouge captivates with its intriguing allure, all the while remaining an approachable and "juicy" wine. In the glass, it’s a like a gorgeous satin dress, revealing aromas of cherries and strawberries. On the palate, it’s full of cherry flavours with a refreshing vibrancy and gentle, embracing tannins.
The Corropoli vineyard for UnRouge Bio is located at 230 meters altitude on clay soil. The grapes were hand-harvested, pressed, and macerated for 10 days and spontaneously fermented using indigenous yeasts. After fermentation, the wine was aged in concrete for 6 months, followed by bottling. This wine is not fined, nor filtered.
Food Pairing: poultry, pasta, cheese, and cured meats.
Serve: While this wine can be served at room temperature, we prefer it just slightly chilled

The grapes are from 40 year old vines on clay and calcareous soil from Weingut Nägele in Baden. After picking, they were left in the cold overnight performing a cold maceration. The next day they were pressed and the juice was transferred into 500L barrels to ferment and age.
This year the winemakers Antoine Lucchesi and Daisy Merrick have decided not to disgorge the wine. Meaning the yeast particles are still inside the bottle. Therefore your wine may look a little cloudy.
The notes are of green apple, with creamy mouthfeel, lots of little bubbles all over the tongue, slightly wild.
IMPORTANT / WHAT TO KNOW BEFORE OPENING THE BOTTLE:
- ENSURE THE BOTTLE IS COLD!
- KEEP IT STANDING UP THE RIGHT WAY IN THE FRIDGE
